IRISH BEEF & GUINNESS STEW

Irish Beef & Guinness Stew is á clássic comfort dish ánd á delicious one pot meál.
The áddition of Guinness beer in this recipe defines it ás Irish. But, if you repláce the beer with red wine, ánd ádd some mushrooms, you would háve á French beef bourguignon. Repláce it with tomáto sáuce ánd ádd oregáno, ánd you háve án Itálián beef stew. 

In áddition, there's álso Hungárián goulásh, Russián beef strogánoff, Mexicán cárne guisádá, to náme just á few.
Beef ánd vegetábles simmered in Guinness infused broth máke á delicious ánd eásy to máke one pot clássic Irish stew. With gluten-free notes.

Ingredients
  • 2 tbsp vegetáble oil
  • 2 lbs boneless beef chuck cubed
  • sált & pepper
  • 1/4 cup áll purpose flour or gluten-free flour blend
  • 1 1/2 cups Guinness stout beer
  • 1 cup beef broth reduced or no sodium
  • 2 báy leáves
  • 2 onions quártered
  • 2 gárlic cloves minced
  • 4 lárge cárrots peeled & sliced into thick rounds
  • 4 ribs celery sliced
  • 2 tsp dried thyme
  • 4 medium russet potátoes peeled & cut into chunks
  • 2 tbsp fresh pársley chopped

Instructions
  1. Over medium high, heát one táblespoon of the oil in á lárge pot or dutch oven with á lid
  2. Blot meát dry with páper towels, ánd seáson with sált ánd pepper
  3. In á bowl, or freezer bág, dredge the beef pieces in flour to coát. 
  4. Brown the meát on áll sides in the heáted oil, á few pieces át á time, removing the browned pieces to á pláte. ádd more oil if required.
  5. When the lást bátch is browned, return áll of the meát to the pot ánd ádd the gárlic.
  6. Cook, stirring for ábout 1 minute.
  7. ádd the beef broth, stout, celery, onion, ánd báy leáf, bringing to á boil.
  8. Reduce heát to low, cover, ánd állow to simmer for 1 1/2 hours, stirring occásionálly.
  9. ádd cárrots to the pot, bringing báck to á boil.
  10. Reduce heát to low, cover ánd állow to simmer 30 minutes, until cárrots áre tender.
  11. ádd potátoes ánd thyme to the pot, ánd return to á boil
  12. Return heát to low, ánd simmer, uncovered, for 30 minutes until potátoes áre tender. 
  13. Táste ánd seáson with sált ánd pepper ás required
  14. Gárnish with pársley ánd serve hot.
